Pickling

First Edition. North Chicago, IL: Chemical Products Company, 1929.

Cloth-backed boards, 12mo, 49pp. Illustrated with photographs and various charts printed in red and black. VG+ to Near Fine with minor sunning and discoloration, slightly wavy. A few stray marks on the cover. Tidy copy of the "careful study of the fundamentals of pickling" designed to provide a better technical understanding of the science behind the process. Published at the beginning of the Great Depression, the foreword begins with a quote from President Hoover: "It is only through the elimination of waste and the increase in our national efficiency, that we can hope to lower the cost of living, on one hand, and raise the standard of living, on the other." To clarify, "pickling" here refers to the "process of cleaning scale and rust from iron or steel by immersing them in a dilute solution of acid," so these recipes are not recommended for cucumbers or onions. 4 in OCLC.
